I reached Masters off the back of this god and have been playing him since season one so i know a thing or two about how to play Hades.
Hades is a god that loves to play around his opponents beads, jumps, and ultimate abilities. More often than not you will be wanting to save your ult for a good moment to get one or more enemies guaranteed to be locked down in your ult. Whether they are immobile, jumped, or have beads down, Hades has to be able to lock enemies down with his ult in order to win fights. The best advice for playing Hades is to always look for gaps in your opponents setup. To play safe and commit when you see an opening to get a good ult off, or kill an enemy. Just have to have an eye for what to do with the god and how to use his abilities to the fullest. With anything it takes time, Hades has one of the lowest skill caps for being decent with the god, but to play him at high level it can be a bit difficult due to opponent counter builds and needing to know when are the right times to fight.
One last reminder: Hades can be played into the majority of the gods he is weak against and still do well with proper play. They are matchups that are harder for him, and some like Cerberus can be close to unwinnable at times, however they are still possible. Even bad matchups can be treated as good matchups with the proper skills to play around them.

Notes

Devour Souls is our most important ability, it scales due to enemies blighted, heals you and allies, and can making fighting in minion waves really strong on Hades. On Level 8 you do not level a skill and upgrade Devour Souls to max at level 9 with the upgrade to Pillar of Agony.

Notes

Bellona can be hurt strongly by silencing her out of her Bludgeon and is fairly easy to avoid.
The only things Ama has to really disrupt Hades is her Dash and her Ult, if she is dashing a Hades then you can usually Ult and wind up with a dead Ama.
Gilgamesh is a very strong god in the meta currently, however due to the up front nature and wanting to lock enemies down inside the Gilgamesh ult gives Hades an opportunity to return the favor with his own ult. Instead of you being trapped with the Gilgamesh, he is now trapped with you.

Gods like Anubis and Baba Yaga and gods that can be strong against or weak against, fully depending on who gets ahead in the match first. Both having ults that negate Hades ult and wins them a kill is extremely scary.
AP: Immobile but tons of Antiheal. If able to play around properly can become a strength for Hades, High risk, High Reward/Consequences
Agni: Out ranges Hades every step of the way, requires blink and beads to really be able to dive him and have a chance at taking him out.
Eset: With a stun, Silence, and a powerful defensive ult she can be incredibly hard to handle or deal with. She can keep herself safe with her ult while also having the range advantage against Hades.
Thoth: Range, Range, and more Range. If a Thoth is smart you will never be able to reach him, his range advantage is so strong that he is one of the hardest gods for Hades to deal with
Zeus: After the massive Zeus buffs, Zeus ult being able to be thrown down on top of Hades ult, and the Buff to Book of the Dead, he can be incredibly hard to kill while being able to kill Hades with minimal effort. (In ranked, recommended ban at the moment)

Cerberus: To say the least, good damage and severe antiheal. A good Cerberus can keep Hades out of fights the entire game. *Worst matchup for Hades in the game*
Ganesha: Silence, Knockup, and High damaging ult. Has really good counter engage vs Hades
Ares: Chains and Ult. Keeping Hades from jumping and forcing him to constantly burn beads or ult will keep him out of the fight
Geb: Shield with a cleanse and really good counter engage vs Hades
Sobek/Bacchus: Good CC, Built in Antiheal, can easily lockdown Hades while making it naturally harder for Hades to fight

Heimdallr: Avoid this Ult at all costs, when his ult is down favor goes to Hades, but his ult can counter engage and completely destroy Hades

Chiron: Cleanse, Healing, hard to lock down and good range
Medusa: Massive antiheal on her dash, can burn Hades through his ult
Cupid: His ult can lock down Hades with no beads and can really be a menace

Cama: Extremely hard to lock down, can use ult to avoid all of Hades Damage, while still dealing massive damage
Da Ji: Extremely hard to lock down, can use ult to avoid all of Hades Damage, can then pull Hades if timed properly
Kali: Cannot die in Ult, can burn Hades and Kill him before her ult wears off, best to only engage when her ult is down
Ravana: Can ult in/out, immune damage, and get out of Hades damage, can easily put Hades on the back foot early
Serqet: Good CC, lots of damage, and 100% antiheal on her ult

Erlang: Some issues similar to Kali, very hard to kill and can do insane damage off of his ult and knockup.
