You get 4-5 Health pots depending on how much you are going to brawl in lane. You don't need any mana sustain with Ganesha passive w/ guardians blessing.
Not much of a difference between the 2 build paths for your core items. Depending on who you are against you just want to buy items that will counter the enemy team. So if against multiple auto attack based gods you would most likely buy Midgardian Mail or if VS a comp with a lot of healing Pestilence. Also Reinforced Shoes aren't a must buy just depending on how much CC/Tick Damage they might have its generally the best pick up. I sometimes go Shoes of Focus for the extra CDR, since Ganesha Ult isn't that high of a cooldown I don't really see the need to go it.

Traveler's Cloak
I always skip leveling @8 and finish leveling the 1 and getting the second level of the ult. Always prioritize leveling Dharmic Pillars the protection shred is just so much better than the benefits you receive from leveling the other abilities. Also for the use of Dharmic Pillars I want to stress the fact that it is always best to get a confirmed his with the ult rather than trapping them in specific situations like a chase down. Also don't feel the need to start the fight with your ult. Pillars are best used after a target is CC'd. Can combo well with Ne Zha and Agni, once they are taken into the air or stunned place the ult on them for protection shred for clean kills.
Hard to pick and point all of the gods he does well against because he is mostly dependent on how well can your team utilize his ultimate. Silence is pretty strong against all gods that rely on their abilities to kill someone or initiation.
These gods will be the hardest to go against but always try to get your ult off before they get a chance to initiate, that's the best advice I can give. Ganesha is just not that great into late game auto attack gods.
